Rosetta’s Roasted Carrot Hummus Recipe

Happy Holidays from MindBodyWorks! Look for some more Blogs in the New Year! Here’s a recipe I came up with for an appetizer!


  • 4 medium carrots
  • 6 cloves of garlic
  • 1/4 cup olive oil
  • 1/4 – 1/2 cup tahini
  • Juice of 1 lemon
  • Handful of parsley & cilantro
  • Salt, pepper, cumin to taste


Roast 4 medium Carrots cut into spears and 6 cloves of garlic in a pan with olive oil on 350 for 30 minutes. Blend in a Bullet or blender 1/4 -1/2 Cup of Tahini, 1/4 Cup olive oil, juice of 1 lemon, handful of parsley and cilantro, more or less, salt and pepper, some cumin to taste and the roasted carrots and garlic. Voila! Adjust any ingredients using your intuition and taste! Enjoy! 🙂
